Method

  1. Preheat the oven to 175°C.
  2. Cream the margarine, brown sugar and sugar. Add the eggs one at a time and mix until combined.
  3. With the mixer on low speed add in the cake meal, potato flour, vanilla pudding, baking soda and salt. Mix until combined. Add in the vanilla and chocolate chips.
  4. Using a 2 tablespoon size cookie scoop, drop the dough onto a parchment lined baking sheet and bake for 10-12 minutes until the edges are slightly brown for a soft and chewy cookie. Bake 12-15 minutes for a crispy and crunchy cookie.
