Beef & Noodles Stir Fry

300g fettuccine pasta noodles cooked per packet instructions | |
3 tbsp olive oil | |
400g beef strips | |
1 red, yellow and orange bell pepper all cut into strips | |
1 carrot, peeled and cut into strips | |
1 red onion, sliced | |
4 cloves garlic sliced | |
200g sugar snaps, topped and tailed | |
100g button mushrooms, sliced | |
Salt and Pepper | |
1/3 cup soy sauce | |
3 tbsp white wine vinegar |
1. Boil noodles according to package instructions, rinse and set aside.
2. Heat oil in wok or skillet to a medium high heat, add in the beef strips and toss for 3 or 4 minutes or till preferred doneness. Remove from pan and set aside.
3. Add the onion, garlic and carrots to the wok on a medium flame and toss for 1 – 2 minutes, then add in the rest of the vegetables for a further 3 minutes.
4. Add the noodles and beef back into the wok, toss to mix, season with salt and pepper and the soy and sauce and vinegar. Toss for a further minute to allow the noodles and beef to heat through.
