Method
- Preheat oven to 180 C.
- Pour lemon juice over the salmon, then top with the sliced peppers.
- Drizzle with the balsamic vinegar and season with salt and pepper to taste.
- Bake open for 20 minutes

- 8 – 10 mini peppers sliced
- Juice of 1 lemon
- 2 – 3 tbsp balsamic vinegar
- Salt and black pepper
