Sundried Tomato Quinoa
Method
- Saute onion in the oil from the tomatoes on medium heat until soft, rinse quinoa thoroughly and add to pan, stir and toast for a couple minutes, add the tomatoes chopped, water, salt and pepper to taste and cook on low for 15 minutes until quinoa is light and fluffy.
- Add parsley and olives, pour over lemon juice.
- Serve warm or cold, or as a complete meal with a piece of grilled chicken or fish!

- 1 (180g) jar Sundried tomatoes, sliced, oil reserved
- 1 onion finely diced
- 1 cup raw quinoa
- 1 1/3 cups water approx
- 1/2 cup chopped fresh parsley
- Juice of 1 lemon
- 1/2 cup green olives
- Salt and pepper
