Method

  1. Pre heat oven to 180C⁠
  2. Place onion and garlic in dish, place lamb on top. ⁠
  3. Pour over water / wine and then season with salt, pepper & garlic. ⁠
  4. Cover tightly and bake for 1.5-2 hours. ⁠ ⁠
  5. Using a fork, or your hand if it’s cool enough, shred the lamb with the onions and garlic ensuring to remove any bone lumps of fat. ⁠ ⁠
  6. Spread 1-2 tbsp Dijon mustard on a malawach round, cut it like a pizza into 8 pieces keeping it together still. ⁠
  7. Place lamb on top and roll into pastries from the outside in. ⁠
  8. Place on a baking sheet, and repeat for all malawach pieces. ⁠
  9. Brush over with egg, sprinkle with sesame seeds and bake for 30-40 mins. ⁠ ⁠
  10. Serve with mustards, mint sauce or other condiments of your choice.⁠

  • Lamb cutlets⁠

  • 1/4-1/2 cup white wine or water
  • Dijon mustard
