Method
Slice the halloumi into approximately 4mm thick slices, pat dry and then brush with olive oil on both sides.

- 400 g variety of cherry tomatoes
- ¼ cup fresh basil leaves
- ¼ cup fresh parsley
- ½ red onion
- Olive Oil
- Salt and pepper
