Pomegranate Chicken
Method
- Pre heat oven to 180C
- Slice onion, place in roasting pan with garlics and top with the chicken laid out.
- Heat olive oil in pot, add in pomegranate juice, tomato puree and honey. Season with enough salt and pepper for chicken. Stir well and bring to a gentle simmer.
- Pour over chicken and baste for a minute or 2.
- Cover and cook for 1 hour.
- After an hour, uncover chicken, baste and cook uncovered for a further hour to hour and half basting every 20 minutes.
- Slice courgettes, toss with olive oil, salt and pepper, roast on a single sheet for 20-30 minutes.

- 330 ml pomegranate juice
- 4 tbsp tomato puree

- Courgettes, sliced
