Balsamic Aubergine Salad
Method
- Saute the onion, garlic and pepper on a low/medium heat, until soft. Season with salt and pepper.
- Add in the aubergine, stir and cook for approximately 20 minutes until soft.
- Add in the tomatoes and balsamic vinegar and season with salt and pepper.
- Cook for a further 10 minutes, add in more oil if needed. Serve warm.

Ingredients
- 1/4 cup olive oil
- 3 gloves garlic, crushed
- 1 red onion, diced
- 1 yellow pepper, diced
- 1 orange pepper, diced
- 2 aubergines, diced
- 1 cup cherry tomatoes
- 3 tbsp balsamic vinegar
- Salt & Pepper
